LENTIL STEW WITH VULCANO HAM

Lentil stew with vulcano ham

Ingredients for 4 persons:

200g Vulcano ham, 250g dried lentils, 1 large onion, 2 carrots, 1 small piece of celeriac, 2 cloves of garlic, 1 carrot, 100 g bulgur (better known as Ebly pearl wheat), salt, pepper from the mill, 1 sprig of fresh thyme

PREPARATION

Lightly brown the thinly sliced onions in 2 tbs. of rapeseed oil, cut the root vegetables into small dice and add, finely chop the garlic, briefly fry together and pour over 1 litre of vegetable stock or water. Previously soak the lentils for at least 3 hours in cold water, strain and blend in, season and boil for approx. 10 min. In the meantime, cut the Vulcano ham into fine strips and finally mix into the dish.
