VULCANO HAM WITH SAUTÉED MUSHROOMS AND SUMMER VEGETABLES

Vulcano ham with sautéed mushrooms and summer vegetables

Ingredients for 4 persons

250g Vulcano ham, 120g boletus mushrooms, 250g chanterelles, butter, 150g tomatoes, 120g courgettes, 150g sweet peppers, 120g lettuce, balsamic vinegar, sunflower oil, salt, pepper and fresh herbs

PREPARATION

Clean the chanterelles and boletus mushrooms, wash. Cut the courgettes and tomatoes into slices; cut the sweet peppers into larger dice. Sauté the chanterelles and boletus mushrooms in butter and season with salt and pepper. Fry the courgettes, sweet peppers and tomatoes in sunflower oil and season with salt, pepper and fresh herbs. Briefly heat the Vulcano ham in a hot pan without any fat. Season the lettuce with balsamic vinegar, oil, salt and pepper. Arrange the chanterelles, vegetables and lettuce on the plate and finally top with the heated Vulcano ham. Garnish with fresh herbs.

TIP
Vulcano ham also makes an excellent accompaniment to sautéed chanterelles or boletus mushrooms with eggs.
